4 cup Flour
4 tsp Baking Soda
4 tsp ground Cinnamon
3 tsp ground Ginger
2 tsp ground Cloves
2 tsp Salt
1 cup Vegetable Oil
1/2 cup Butter, unsalted (room temp)
2 cups Brown Sugar, firmly packed
2 Eggs, room temp
1/2 cup Dark Molasses
Ice Water

Sift together the first 6 ingredients. In large bowl, beat shortenting, butter and brown sugar with electric mixer until fluffy. Add eggs and molasses, beat until well blended. Mix in dry ingredients. Refrigerate dough until firm, at least 1 hr or overnight.

Preheat 350. Roll dough into 1 1/2 in balls. Dip quickly into ice water and then roll in sugar to coat.
Place on lightly buttered cookie sheets about 2 inches apart. Bake until lightly browned and cracked on top but still soft to the touch, about 10 minutes. Let stand a minute or so before transferring to a wire rack to cool completely. Store in airtight container.
