2&1/2-3 C bread flour
1/2 C oats
2 TBSP brown sugar
1 envelope RapidRise yeast
1 tsp salt
1tsp cinnamon
1&1/4 C water
2 TBSP butter

Directions:
Directions:
In large bowl, combine 1 C flour, oats, brown sugar, undissolved yeast, salt and cinnamon. Heat water and butter till very warm (120-130º). Gradually add to flour mixture. Beat for 2 min at med speed with electric mixer, scraping bowl occasionally. Stir in enough flour to make a soft dough. Knead on lightly floured surface until smooth and elastic, about 6-8 min. Cover, let rest for 10min. Roll dough to 12X7" rectangle. Start at short end and roll up tightly (as for jelly roll). Pinch seam and ends to seal. Place seam side down in greased loaf pan. Cover and let rise in warm, draft-free place until double in size (about 1 hr) Bake at 375º for 30-35 min. Remove from pan and cool on wire rack.
