8 Med Baking Potatoes, about 4 lbs
1 - 8oz Cream Cheese, room temperature
1/2 Cup butter, softened
2 Cups shredded, sharp Cheddar
8 oz Sour Cream
2 cloves minced Garlic
1 1/2 tsp Salt
1/2 tsp Pepper
Cooked Bacon, crumbled

Directions:
Preheat oven to 350º, Bake potatoes till soft. Peel and mash potatoes. Add cream cheese, 1 cup of cheddar cheese and sour cream. Stir well. Add garlic, salt & pepper, stir. Spray 13x9 dish with vegetable oil cooking spray. Place potatoes in dish. (you can cover and refrigerate till later)

Bake uncovered 30-35 minutes at 350º sprinkle with remaining cheddar cheese and bacon. Return to oven till cheese melts, about 5 minutes.
