6 Eggs
1 ½ cup milk
11/2 cup flour
3 tbsp oil
1 ½ tsp salt

Directions:
Mix batter till good consistency (think pancake like)….you will know
Cook in crepe like pan….spraying cooking spray when needed
After cooled
Drop and roll with locatelli cheese into a roll.
Place on bottom of escarole and or chicken soup dish. Pour hot soup on top.
You can use escarole soup or plain chicken soup.

Make as many as you need…. double recipe as needed.

Grandmom taught Steve her method to making the screpelles. He makes them much thinner than she did. Steve took over making them with Grandmom last Christmas. Nothing made my mom happier than to spend a day in the kitchen with Steve. She will be so happy to have you pass on this recipe to your children
