Mom's Banana Bread Recipe

1/2 C butter, softened
1 C sugar
2 eggs
1tsp Vanilla
2-3 ripe bananas
2 C flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda

Directions:
Directions:
Cream together butter and sugar. Mix in one egg at a time; mix well. Stir in vanilla and set aside. Mix dry ingredients in separate bowl. Squish bananas with the back of a fork. Add dry ingredients alternately with bananas; mixing well in between. Pour batter into greased mini loaf pans and bake at 340º for 30-40 min (or when bread starts to pull away from sides of the pan). Let cool for 5 min, then remove from pans and cool on wire rack.

Mom substitutes the butter with oil to make it healthier. You could probably do half oil and half applesauce to cut the fat content.
