4 lb. potatoes or instant potatoes
1/3 c. milk
1/4 c. butter, softened (not margarine)
8 oz. cream cheese, softened
8 oz. sour cream
1-1/2 tsp. salt
1 tsp. black pepper
2 tbsp. butter, melted

Directions:
Directions:
Simmer potatoes in water until tender, about 25 minutes. Drain and peel. Place peeled potatoes in large bowl and mash.

(For the instant potatoes: Follow the box's directions for 16 servings, using just the milk and water. Heat the water only and add the milk cold, then follow the same directions for simmered potatoes.)

Stir in 1/4 c. butter, cream cheese, sour cream, milk, salt, and pepper. Spoon into a lightly greased 13x9" baking dish. Brush with melted butter. Cover and refrigerate overnight.

Remove from refrigerator and let stand at room temperature for 30 minutes. Bake at 350º for 40 minutes or until thoroughly heated.

We used instant potatoes and they were a hit. A friend took this recipe to Iraq and the guys love it. It freezes very well.
