4 boneless skinless chicken breasts (or 8 boneless skinless chicken tenders)
2 cans cream of chicken soup
1 - 8 oz. container of sour cream
1 box Ritz crackers
2 tbsp. poppy seeds
salt and pepper to taste
1 half stick melted butter

Directions:
Directions:
Boil chicken until cooked through. Cool in refrigerator. Tear or chop the chicken into small pieces. Mix together the cream of chicken soup, sour cream, poppy seeds, and salt and pepper. Mix the chicken into this mixture. Spray a 9 x 13 inch cooking dish with Pam. Pour mixture into the pan. Melt the butter.

Crumble up 1 and a half stacks of Ritz crackers on top of the casserole. Drizzle melted butter over the entire casserole. Bake at 350º for 25 to 30 minutes.
