2 cans white shoepeg corn (drained)
2 cans black-eyed peas (drained)
2 cans Rotel tomatoes (1can regular and 1 can hot)
Several cloves fresh finely chopped garlic
12-18 spring onions chopped
Bell pepper diced
2 tomatoes (plum work best) skinned and diced
Large bottle Italian salad dressing (pour oil off and replace with olive oil)
Salt and pepper to taste
approximately 1 tablespoon lime juice

Mix above ingredients together and refrigerate over-night

Serve with corn chips (Fritos Scoops preferred)
