2 large heads cauliflower, chopped
4-6 C water
2 8oz pkg cream cheese
5oz jar Sharp American cheese spread
2&1/2oz jar dried beef, chopped
instant potato flakes

Directions:
Directions:
Cook cauliflower in water till tender. Add cheeses and dried beef. Cook slowly until cheese is melted. Add potato flakes to thicken. Salt and pepper to taste.

Sometimes I substitute the American cheese spread with some cubed Velveeta. I will also add a few dashes of nutmeg if serving with Mom's Pumpkin Muffins.
