1 cucumber, chopped
1 clove garlic, crushed
1 red pepper, chopped
1 tsp honey
1/2 tsp dill weed
salt & pepper (to taste)
4 c. tomato juice
1 c. sour cream
1 or 2 scallions, chopped
several raw mushrooms, sliced

Puree cucumber, garlic, and red pepper in food processor. Combine all ingredients and chill.

This chilled soup is so easy to make for a party. This recipe can be easily multiplied. The taste and color is complimented well with cheese grits. Nice for spring or summer.
