1 1/2 lbs Ground Beef
1 packet dry Enchilada Sauce Mix
2 8oz cans Tomato Sauce
1 medium Onion (chopped)
2 cloves Garlic (chopped)
1 small can sliced Black Olives
1 cup Water
1/2 tsp Salt
8-10 Corn Tortillas
1 cup Shredded Cheddar Cheese

Directions:
Directions:
Brown ground beef and drain.
In mixing bowl combine all ingredients except tortillas and cheese. Mix all together.

Line crock pot with heavy duty aluminum foil, (make a next of foil inside crock pot so that foil overlaps rim of crock pot. The excess foil makes handles to lift the entire casserole out of pot when cooked)

Place thin layer of meat sauce on top of foil lined bottom of crock pot, next layer corn tortillas, then more meat, alternate layers of meat and tortillas until all gone using meat sauce for top layer. Cook on low for 4 hours. Place the cheese on top and close lid. Cook for 5 to 10 minutes just to melt cheese.
