1 (8 oz) pkg. linguine
1/2 c. butter
1/3 c. all-purpose flour
1 bunch green onions finely chopped
1 small onion minced
4 garlic cloves minced
2 celery ribs minced
1 chicken bouillon cube
1 pint whipping cream
1 (2 lb ) frozen crawfish tails thawed
1 (10 oz) can diced tomatoes and green chilies, drained
1 T. Creole seasoning
1 T. chopped fresh parsley
1/4 tsp. pepper
1/8 tsp. salt
Hot sauce (optional)
Shredded Parmesan cheese

Cook linguine according to pkg. and drain.
Melt butter in a heavy skillet over medium heat. Add flour and cook stirring constantly for 2 min. or until blended. Add green onions and next 4 ingredients and saute 5 min or until tender. Add bouillon cube and next 7 ingredients, cook for 10 min or until thickened. Stir in hot sauce if desired. Serve over linguine noodles and sprinkle with shredded Parmesan cheese.

2 lbs of peeled medium shrimp can be substituted for the crawfish tails!!
