1/4 c. butter, softened
1/2 c. sugar
1 egg
1 c. sour cream
1- 1/2 tsp. rum extract
1- 1/2 c. all purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 can (8 oz.) crushed pineapple, drained
1/2 c. flaked coconut
1/3 c. chopped pecans

Directions:
Directions:
Cream butter & sugar. Add egg, sour cream & extract & mix well. Combine the flour, baking powder, baking soda, & salt. Stir into the creamed mixture just until moistened. Fold in the pineapple, coconut & pecans. Fill greased or paper-lined muffin cups two-thirds full. Bake at 375º for 22-25 minutes or until toothpick comes out clean. Cool 5 minutes before removing from pan.
