1/2 cup Butter, softened
1 cup Sugar
2 1/2 tsp Baking Powder
2 Eggs (Extra Large)
1 Egg Yolk
3 cups All Purpose Flour
1 cup Dried Cranberries
1 tbsp finely shredded Orange Peel
1 Egg White
1 tbsp Sugar

Directions:
Preheat oven to 375º.
Beat Butter in a large bowl until light and fluffy. Add 1 cup Sugar,Baking Powder.Beat till well combined. Beat in whole Eggs and Egg Yolk. Beat in as much of the flour as you can. Then stir in remaining Flour and Cranberries and Orange Peel. Divide dough in half.Shape each half into an 11x2x1-inch loaf. Place on a cookie sheet. Stir together Egg White and 1 tsp Water. Brush over dough. Sprinkle with 1 tbsp of Sugar. Bake for 20 to 25 minutes or until light brown.
Cool on sheet for 1 hr.Cut each loaf diagonally into 1/2-inch slices. Place slices, cut side up on an ungreased cookie sheet. Bake at 325º F for 10 minutes. Turn slices over; Bake 10 to 15 minutes more or until crisp. Cool on racks.

You can substitute your favorite dried/candied fruit I just liked the cranberries.
