Boneless, skinless chicken breast (one per person)
Fresh mixed salad greens
Dried cranberries
Cucumbers unpeeled
Purple onion thinly sliced
Pecans
Raspberry salad dressing
Herbs & lavender mixed seasoning mix

Directions:
Directions:
Season chicken breast with seasoning mix and saute' in olive oil. Set aside.
Saute pecans in small amount of butter, drain on paper towel.
On individual large salad plates cover with salad greens and cover greens with cranberries, mandarin oranges, cucumber and onion. Top with pecans.
Slice each chicken breast and arrange on top of pecans. (Chicken breast should be warm)
Add raspberry dressing to your taste and enjoy.

For presentation I like to arrange the chicken slices to look like a whole chicken breast.
