Ingredients: 1 and 1/4 C. chicken broth 4 tsp. cornstarch 1/8 tsp. pepper 2 C. dried penne 1 medium red pepper cut into thin, bite-sized strips 1 medium yellow or green pepper cut into thin, bite-sized strips 3 garlic cloves, minced 1 T. cooking oil 12 oz. chicken breast cut into 1-inch cubes 1/4 C. lightly packed fresh basil leaves, cut into thin shreds 2 T. shredded parmesan cheese

Directions:In a small bowl combine broth, cornstarch, and pepper. Set aside.
Cook pasta according to package directions, omitting any oil and salt. Drain pasta. Return to pan. Cover to keep warm.
Coat an unheated large skillet with nonstick cooking spray. Heat over medium heat. Stir-fry peppers and garlic in hot skillet for 2-3 minutes or until peppers are crisp-tender. Remove from skillet. Add the oil to skillet; increase heat to medium-high. Stir-fry the chicken in hot oil for 3-4 minutes or until chicken is no longer pink.
Stir broth mixture, add to skillet. Cook and stir until thickened and bubly. Return peppers to skillet; add shredded basil. Cook and stir for 2 minutes more.
To serve, toss chicken mixture with hot cooked pasta. Sprinkle with parmesan cheese. If desired garnish with basil sprigs. |
