3/4 c. raw wild rice
4 T butter/margarine
4 T flour
2 c. chicken stock
1/2 lb. sliced mushrooms = 2 cans
1 T minced shallots
3/4 c. heavy cream
Pinch of ground nutmeg
Salt to taste
1 1/2 c. cooked boneless chicken (in cubes)
1/2 c. dried cherries

Directions:
Directions:
Rinse & drain wild rice. Place rice in sauce pan with 2 1/4 c. water. Bring to boil, cover, & cook for 1 hour.
Melt 3 T butter/marg and blend in flour. Slowly add chicken stock, stirring until blended & thickened.
Saute mushrooms & shallots, cooking away most of the liquid. Combine with sauce and simmer about 15 min.
Combine chicken, cherries, rice, & sauce in lightly greased baking dish. Cover loosely and bake 45 minutes at 325º (or until heated throughout).
