1 medium size head cauliflower
1/2 c. mayonnaise
1/4 c. grated parmesan cheese
2 T chopped parsley
1 T lemon juice
1/4 tsp. salt
2 egg whites, beaten until stiff but not dry

Directions:
Directions:
Trim and wash cauliflower. Cook covered in 1 inch boiling water for 20 minutes or until just tender. Drain, place in shallow baking dish, keep hot.
Combine mayo, cheese, parsley, lemon juice, & salt. Fold into beaten egg whites. Spread sauce over cauliflower.
Broil with top of cauliflower 6 inches from heat for 5-8 minutes or until sauce is puffed and golden brown. If desired, sprinkle with additional cheese.
