2 Qt. ripe tomatoes
4 onions
4 green peppers
2 pieces of celery
2 1/2 c. vinegar
2 T salt
2 tsp. cloves
2 tsp. cinnamon
1 c. brown sugar

Directions:
Directions:
Scald tomatoes in boiling water for 20 seconds, peel, and cut into quarters. Grind or finely chop onions, peppers, and celery. Combine all ingredients in a large covered pan. Cook about 3-4 hours at medium-low heat ("long & slow") until about the thickness of ketchup. May need to remove lid for last part of cooking. Stir occasionally so it does not stick to bottom of pan. Place in hot, clean pint jars with sealing lids.

Recipe doubled yields approximately 12 pints. Doubled requires 12-13 lbs of tomatoes.
