8 ounces elbow macaroni
1/4 cup butter
1/4 cup all purpose flour
2 cup milk
1 tsp. salt
1 cup grated cheddar cheese
1 cup 6-Italian cheese mixture
1 egg beaten
paprika (optional)

Directions:
Directions:
Cook macaroni according to package directions, but cook 1 minute less than it calls for. Melt butter in saucepan over medium heat. Add flour, stirring until smooth. Gradually add milk stirring constantly until thick and bubbly. Remove from heat and mix in salt and cheese, slowly, stirring until cheese melts. Beat egg slightly, then add a small amount of cheese mixture to it to temper it (so it won't scramble when it goes in the hot mixture), then add it gradually back into the cheese mixture. Add macaroni to cheese mixture, then put all into a greased casserole dish. Bake at 350º for 30 minutes.
