1 cup chopped onion
1/4 cup butter
1 10 3/4 ounce can beef broth
1 10 3/4 ounce can condensed French onion soup
1 4 1/2 ounce can mushroom pieces, drained
1 cup uncooked white rice

Directions:
Directions:
In a saucepan over medium heat, saute onion in butter until almost tender. Remove from heat. Stir in broth, onion soup, mushrooms and uncooked rice. Pour into casserole dish. Bake for 1 hour or until rice is set.

This is a great way to jazz up rice for dinner company. The recipe originally called for an entire stick of butter, but my family thought that was too much.
