3/4 cup whipping cream
1 egg yolk
handful of chives
2-3 minced purple shallots
1 clove garlic, crushed, but somewhat intact (the idea is that the flavor releases, but you can fish it out later)
mushrooms (I used oyster and portabella)
2 6 oz filets
parmasean cheese
olive oil

Directions:

Preheat oven to 400.

Whip cream until peaks form, add egg yolk and continue whipping until
peaks form again. Keep chilled.

Over medium heat, cook shallots and garlic clove in olive oil until the
shallots are soft. Add about a pound of mushrooms, season with salt and
pepper and cook until soft. Remove from heat and let cool.

Heat a little olive oil in an oven proof skillet over high heat and
quickly brown the filets for a couple of minutes on each side. Remove from heat
(they'll be quite rare).

Fold the mushrooms and chives into the whipped cream and egg. Top the
steaks with the mixture and sprinkle with parmasean cheese. Finish
cooking
7-8 minutes in oven for medium rare.
