4 tsp butter
1 medium onion, diced
2 cloves garlic, minced
1 piece ginger, (1"long, peeled & chopped)
2 lb raw shrimp, peeled and deveined
1 tsp turmeric
1 tsp hot chili powder
1 tbsp ground coriander
2 shots of rum
1 tsp ground cumin
1 tsp salt
1 tsp black pepper
1 c cream
1/4 c curry powder
1 c coconut milk
1 oz fresh coriander leaves

Directions:
In a saucepan, heat butter and add shrimp. Saute for 2-3 minutes, then add onions, garlic, and ginger. Add rum and flambe, then add turmeric, chili powder, coriander, curry, salt, pepper, and cream of coconut milk. Simmer for 1 minute, serve over rice and garnish with fresh coriander leaves.
