4 medium potatoes (1 1/2 lbs)
Butter
4 eggs, beaten
1 small onion, chopped fine
1/2 c all purpose flour
1 tsp salt, and pepper
1/4 c butter

Directions:
Directions:
Shred enough potatoes to measure 4 cups; drain.
Mix potatoes, eggs, onion, flour, and salt. Heat butter in a 12 inch skillet over medium heat until hot. Pour in 1/4 cup of potato mixture for each pancake and spread to a 4 inch diameter. Fry pancakes until brown, approx. 3 minutes on each side. They must be crisp.
