8 med size sweet potatoes (56 oz canned)
1 c. milk
1 tsp. vanilla
3 tbsp. sugar
1/2 stick butter
1/4 tsp cinnamon
few dashes nutmeg
1 tbsp. orange juice
marshmallows
Directions:
Directions:
Bake potatoes at 350º until done. Peel hot potatoes and mash. Scald milk and add vanilla, sugar, and butter/ To potatoes, add cinn., nutmeg, and oj. Stir. Add milk to potatoes. Put layer of potatoes in casserole, a layer of marshmallows, and remaining potatoes. Bake at 350º until very hot. Add a top layer of marshmallows and brown.

Can be prepared ahead of time and popped in oven at last min. Figure on about 1/2 hr. to get hot.
