2 lbs center cut chuck
1 veal bone
2 marrow bones
1 onion
1 cup navy beans
Celery
Carrots
Parsley
½ package egg noodles

Directions:
Directions:
Use center cut of chuck or neck of chuck. One veal bone and two marrow bones. Rub salt on meat and let stand until ½ pot of cold water begins to boil. Wash meat and add to pot. Let cook ½ hour and add bones. When water comes to boil skim top until clear. Add 1 large onion cut halfway through and simmer for 3 ½ hours. 2 hours before done add 1 cup navy beans washed with hot water. 45 minutes before done add celery, carrots and parsley. Cook ½ package of egg noodles, strain and add to soup.
