1/2 Cup Crisco
1 Cup Strained Carrots (Baby Food)
1 Cup Sugar
2 Eggs
2 Cups Flour
1/2 TSP Salt
1 TSP Vanilla
2 TSP Baking Powder
1/2 TSP Lemon Extract

Cream Crisco, strained carrots, sugar and eggs. Cream together and then all all other ingredients.
Drop on cookie sheet

Bake 350 for 10 Minutes

Frost with Orange Rind Frosting.
2 Cups powder sugar, 1 TBSP melted butter, Juice from 1 orange and 1 1/2 TBSP of orange rind.
Mix all together and frost cookies.
