5 # red potatoes
3/4 tsp salt
dash of pepper
small onion, diced
6 + slices of bacon
3 Tablespoons sugar
1 Tablespoon cornstarch
1/4 cup vinegar
3/4 cup water

Directions:
Directions:
Boil potatoes until tender. When cool enough peel and slice or cut into large cubes.
Fry bacon until crisp, drain and chop. Save bacon drippings.
Heat bacon drippings with sugar and vinegar. Add onions and saute. Mix cornstarch and water. Add to bacon drippings and cook until thickened. Pour hot mixture over diced potatoes. Add salt, pepper. You can double bacon if preferred.

It was hard to get this recipe from Nana as she never measured. Ingredients can be altered per personal taste. Onions can NOT be omitted.
