1 jar of apricot preserves (jam-12 oz.)
1 c. sugar
3/4 c. margarine
1 egg
1/2 tsp. baking powder
2 c. plus 1 tbl. flour
1 1/3 c. coconut

Cream the margarine and sugar together. Add the beaten egg.
Add the flour and baking powder. Fold in the coconut.
Spread into a greased 9 x 12 pan.
Spread jam over top.
Bake at 350 degrees for 35-40 minutes until golden brown.
