1 c. oats
2/3 c. slightly crushed sliced almonds
5 T. brown sugar packed, divided
1 T. flour
1/2 c. melted butter
1 qt. vanilla ice cream, softened
1 1/2 lb. fresh peaches, sliced (4 1/2 c. )
1 t. vanilla

In medium bowl, combine oats, almonds, 3 T. brown sugar and flour. Add melted butter and toss thoroughly. Press evenly into 9 in. pie plate. Bake at 375º for 12-14 min. or until lightly browned. Remove from oven; press evenly again with back of spoon. Cool on wire rack. When cool, fill shell with softened ice cream; freeze until firm. Just before serving, toss peaches with 2 T. brown sugar and vanilla; arrange over top of pie.

What's better than fresh peaches in the summer? If you're not serving the whole pie, cut individual pie pieces and pour a heaping serving spoon of peaches on top of each slice. You'll love the crust!
