4 slices bacon, coarsely chopped
4 tablespoons oil
4 boneless, skinless chicken breasts
1/2 cup chopped fresh mushrooms
1 clove garlic, minced
1 cup plus 2 tablespoons chicken broth
2 tablespoons red wine vinegar
1 cup chopped onion
4 small new potatoes cut into halves
1/2 teaspoon salt
1/8 teaspoon pepper
1 tablespoon flour

Directions:

Cook bacon in skillet. Remove bacon; set aside.

Pour off drippings. Add oil and chicken. Brown well on all sides. Add mushrooms and garlic. Saute several minutes. Add 1 cup broth, vinegar, onions, potatoes salt and pepper. Cover and simmer 35 minutes.

To thicken sauce, dissolve flour in 2 tablespoons chicken broth. Stir into sauce. Cook, stirring until thickened and smooth.
