Ingredients:  
1/4 cup olive oil, 1 cup dices sweet onion, 3 cloves garlic, diced,
2 cups dices and peeled tomatoes, 2 jalapeņo peppers, diced, 2
orange sweet mini peppers, diced, 1/4 cup flat leaf parsley,
chopped, 1/4 cup curly leaf parsley, chopped, 1/4 cup cilantro,
chopped, 2 tbsp oregano, 2 tbsp basil, 1 tsp. cumin, 1/4 cup
vinegar, 1/4 cup lime juice, 1/2 tsp salt

Directions:
Directions:
Combine first 3 ingredients, cook in large skillet until tender. Add
remaining ingredients, bring to boil uncovered and simmer on low
until desired thickness, about 1/2 hour. Chill in refrigerator.
Makes 1 quart.
