Acorn squash (1 for every 2 persons)
butter
brown sugar
orange juice concentrate

Cut in half large butternut squash (1/2 squash per person). Cut the bottom off each, just enough to allow to sit level in a large casserole dish. Remove pulp and seeds. Steam or boil until tender. Place the squash in a large casserole dish. Add 1 T. butter, 1/4 c. orange juice concentrate, 1 T. brown sugar. (I never measure this mixture out exactly because each squash is a little different in size. A general rule of thumb is to fill to top with mixture). Bake this at 350º for about 15 minutes
