1 LBS Boneless Pork, cut in 1" Cubes
2 Egg
1 Cup Cornstarch
2 TBSP Salad oil
1 Large Bell Pepper, quarter and sliced
1/2 Cup Carrots, sliced
11/4 Cup Chicken Broth
1 Clove Garlic, minced
1/2 Cup Sugar
1/3 Brown Vinegar
2 TSP Soy Sauce
2 TBSP Cornstarch
1/2 Water
Rice, cooked according to package

Directions:
Whip eggs, dip pork meat into egg and roll into cornstarch. Heat oil in fry pan and fry in oil for 5 to 6 minutes or till golden brown. Drain and keep warm in 9x13 baking dish.

In clean sauce pan cook peppers, carrots and garlic in 2 tbps oil till tender. Stir in chicken broth, vinegar, sugar and soy sauce. Bring to boil, boiling rapidly for 1 minute. Blend 1/4 cup cold water and cornstarch, stir into pan. Cook and stir till thicken. Pour over pork in the 9x13 baking dish.

Bake 350º for 30 minutes.

Serve over rice.
