2 cups sugar
2 tsp. baking soda
2 eggs, beaten
2 tsp. vanilla extract
2 cups lowfat chunky peanut butter

Directions:
Directions:
In a large mixing bowl combine sugar and soda; stir in beaten eggs and vanilla. Add peanut butter, stir with a wooden spoon until well combined. (The mixtrue stiffens as it is stirred)
Form the dough into one-inch balls and drop onto parchment lined or lightly greased cookie sheets. Bake in a 350º oven for about 10 - 11 minutes, or until the bottoms of the cookies are golden brown.
Let stand on the cookie sheets for about one minute before transferring to a wire rack to cool. Pack cooled cookies in a air-tight container. These cookies can also be frozen.
