1 large onion
1 large carrot
2 stalks celery and leaves
1 bayleaf
Dash aand white pepper to taste
Water 8 to 12 cups of water

Cook slowly after bringing to a quick boil.
Skim carefully.
Add vegetaables after 30 minutes of simmering.
Cooking time depends on tenderness of chicken.
