1 or 2 hens, cooked in water to cover
salt and pepper to taste

Pastry:
3 c. all-purpose flour
1 t. salt
1/4 c. lard (or Crisco)
1 t. baking powder
9 T. cold water

Directions:
Directions:
When chicken is done, cool and de-bone. Strain broth. Mix 1/4(approximately) cup of flour into small amount of water to make paste and add to broth to thicken.
In large baking pan grease sides and bottom. Put a layer of pastry (below) and 1/3 of chicken and broth to cover. Put strips of pastry over this and cook in 350º oven for about 20 minutes. Continue with chicken and broth and pastry 2 more times, baking each layer. There will be 3 layers. Last cooking may be longer, depending on ovens.

Pastry:
Mix well and roll out in 3 different rounds. Cuts in strips.
