2 c. squash cooked
2 beaten eggs
1 small chopped onion
Salt & Pepper to taste
1 T. sugar
1/2 c. cracker crumbs

Directions:
Directions:
Cook and mash squash. Add all ingredients except cracker crumbs and onions, which should be gently incorporated right before cooking. Add a shallow coating of any light-colored cooking oil to pan (cast-iron skillet is best). Once oil is hot, ladle in fritters. Allow first side to turn golden-brown, then flip over.
