10 c. ground cucumbers
2-1/4 c. vinegar
2 t. celery salt
1 t. each dry mustard, turmeric, cornstarch, black pepper
4 c. ground onions
4-1/2 c. sugar
1/3 c. salt

Directions:
Directions:
Mix cucumbers and onions together. Cover with the salt and allow to sit overnight. Next morning, rinse and drain. Make a thin syrup of the rest of the ingredients. Pour over the cucumber-onion mixture. Bring to a boil and simmer 30 minutes. Pour into hot sterile jars and seal.

This relish always gets rave reviews. Among those to whom I've given jars of this relish and who wrote nice notes in return are Mrs.. Joe Frank Harris, wife of former Georgia's governor, Former Sec of State Max Cleland and Lt.. Gov. and Mrs.. Zell Miller. Zell and I were graduate school classmates and shared an office when we were both working on our master's degrees in history at the University of Georgia
