2 lbs. thin veal steak, cut into small pieces
flour mixed with salt and pepper
olive oil and butter to fry in
1 garlic clove, peeled
1 cup chopped onion
1 green pepper, chopped
1 lb. mushrooms, sliced
white wine (vermouth or light table wine)

Directions:
Directions:
Dredge meat pieces in seasoned flour and pound to make thin slices. Lightly brown garlic clove in mixture of oil and butter in a heavy skillet. Remove garlic. Saute meat pieces quickly and remove from pan. Saute onion, green pepper and mushrooms until tender but not browned. Place meat on top of vegetables and add1/2 cup white wine and 1/2 c. water. Cover tightly and simmer gently about 15 minutes. Do not overcook.

This recipe assumes that you can get good veal, and that is sometimes hard to find today! You can substitute chicken breast -- it won't be quite the same, but it is still good.
