1/4 c. diced onion
2 packets instant chicken broth mix
2 cloves of garlic minced
1 c. zucchini quartered and sliced
1/2 c. sliced carrots
1/2 c. chopped seeded tomatoes
1 t. chopped parsley
1/4 t. basil
1/8 t. pepper
2 c. water

Directions:
Directions:
In 1 1/2 qt. sauce pan combine onion, broth mix, and garlic, cook. Stir occasionally until onion is translucent.
Add remaining ingredients except for the water; cover and cook over low for about 10 minutes. Stir occasionally.
Add water and bring to a boil. Reduce heat, cover and cook until vegetables are soft, about 20 minutes. Remove 1/2 the vegetables and puree in blender and return to the pan. Heat through.
