3 lbs. of pork roast
White or yellow Hominy
1 large can of tomato juice
4 Zucchini
Lots of grated cheese
1 bag tortilla chips

Directions:
Directions:
In very large pot submerge pork roast in lots of water and bring to a boil. Then allow roast to simmer for a few hours or better. After roast is done simmering remove from water and place both broth and roast in refrigerator. After broth is chilled scoop off the fat that has risen to the top of the broth. Next shred the roast meat and put the meat back in the broth with the tomato juice and drained hominy and sliced zucchini. Cook on a low heat for about an hour until soup is warmed and zucchini is tender.
Serve with grated cheddar cheese and tortilla chips.
