2 cakes compressed yeast
1 teaspoon sugar
¼ cup lukewarm water
1/3 cup fast (lard, butter or oil)
2 tablespoons sugar
2 teaspoons salt
1 cup scalded milk
¾ cup water
4 cups breaded flour

Directions:
Directions:
Break yeast in small bowl and add water and sugar. Let stand in warm place for 15 minutes.
Combine fat, salt and sugar in large bowl and add scalded milk and water. Stir until shortening is melted and cool in lukewarm. Add yeast mixture. Add 4 cups sifted bread flour gradually and mix thoroughly. Cover and let rise in warm place one hour. Stir down with spoon into greased muffin tins, cover and let rise again for one-half hour. Bake in 425 degree oven for 15 minutes. Makes 2 dozen rolls. Entire time from start about 2 hours 15 minutes.
