4 cups apples, cut into small chunks
2 cups sugar
2 teaspoons cinnamon
1 cup coarsely chopped walnuts
2 cups flour
1 teaspoons salt
2 teaspoons baking soda
½ cup salad oil
2 eggs slightly beaten
2 teaspoon vanilla

Directions:
Directions:
In a large bowl mix sugar, apples, cinnamon and walnuts. Let sit for 5 minutes. Sift together flour, soda and salt. Set aside. Combine eggs, oil and vanilla. Add to apple mixture. Blend well. Add flour mixture and stir thoroughly. Pour into a greased 13” x 9” oblong pan. Bake at 350 degrees for 45 to 50 minutes. (Stays moist for several days).
