Cake Batter:
1 Stick Margarine
2 Cups Flour
2 Cups Sugar
1 Cup Buttermilk
1 Cup or more Coconut
5 Eggs Whites Stiffly Beaten
1/2 Shortening
5 Egg Yolks
1 TSP Baking Soda
1 TSP Vanilla
1 Cup Chopped Walnuts or Pecans

Frosting:
1 8oz Cream Cheese
1 16oz Powder Sugar
1/2 Stick Margarine
1 tsp Vanilla

Directions:
Directions:
Beat together margarine, shortening, sugar & eggs. Add buttermilk & coconut, then flour, baking soda, vanilla. Beat until smooth. Add stiffly beaten eggs whites. Add nuts (optional). Pour into greased & floured cake pan.

Bake 350º
(3) Round 20 to 25 Minutes
(1) 10 x 13 35 to 45 Minutes

Frosting:
Cream together cream cheese, margarine. Add powdered sugar & vanilla. Cool cake & frost. Top with coconut & nuts
