1 1b lean ground turkey
1/2 c chopped onion
1 jar (8 oz) Mexican salsa, green or red
1/2 c fat-free sour cream
10 3/4 oz can Healthy Request cream of chicken soup

1 jar (2 oz) sliced pimentos, drained
6 corn tortillas, cut into 1" strips
2 c shredded fat-free cheddar cheese
sliced olives (optional)

Directions:
Preheat oven to 350º. Cook and stir turkey and onion in nonstick skillet until brown. Transfer to colander, rinse with hot water, to get rid of excess fat. Shake dry. Spread 1/2 of the salsa in an ungreased square baking dish. Mix the remaining salsa, sour cream, soup, and pimentos. Layer half the tortilla strips, turkey mixture, soup mixture, and cheese in baking dish. Repeat. Bake uncovered until it's hot and bubbly, about 30 minutes.
Let stand 10 min. Garnish with olives, if desired.
