2-1/2 lb. Italian sausage cut into 4" pieces
several peppers: red, yellow, green, cut into wide strips
1/2 lb. mushrooms, cut into quarters
1 large sweet onion, coarsely chopped
2 garlic cloves, minced
salt, pepper
fresh or dried basil and oregano, to taste
2 T minced fresh parsley
olive oil, to fry vegetables

Brown sausage slowly in a large heavy skillet, piercing casings to release fat. Remove. Pour off excess drippings, and add enough olive oil to cover pan. Saute garlic, onion and peppers lightly. Add mushrooms and saute until beginning to turn golden. Add seasonings, stir. Place meat on top of vegetables and simmer very slowly. Cover, until suasage is tender and flavors are blended. May be prepared ahead, refrigerated and reheated. Flavors improve with age. Great served with nice fresh Italian bread.

I first had this dish at 15 Summer Street, probably over fifty years ago. This has been a perennial favorite over the years, and continues to be a dish I serve whenever I have a buffet type gathering. Having the right sausage is, of course, important -- find a good Italian grocery or meat store and you can't go wrong!
