1 lamb shank for each person
¾ cup flour
1/3 teaspoon salt
dash pepper
½ teaspoon oregano
1 clove garlic
¼ cup butter
1 large chopped onion
1 cup red wine
½ cup water
Thyme, parsley, bay and celery leaves

Directions:
Directions:
Allow 1 lamb shank for each person. To serve six – mix ¾ cup flour, 1/3 teaspoon salt, dash pepper and ½ teaspoon oregano. Mash 1 clove garlic and heat in ¼ cup butter. Rub shanks with flour mixture and brown in the butter, turning on all sides. Remove meat to roasting pan and add 1 large chopped onion, 1 cup red wine and ½ cup water. Sprinkle with thyme, parsley, bay and celery leaves. Cover meat and cook in 350 degree oven for about 2 hours, basting meat 2 or 3 times during the cooking. Serve with rice or noodles, buttered peas and cottage cheese salad topped with mint jelly.
