2 Squash
1 – 2 Sweet potatoes
1 cup rice
Water
˝ cup oil
Salt and pepper to taste
Couple fresh tomatoes
1 can tomato sauce

Directions:
Directions:
Put cut up potatoes on bottom of pan and arrange the following in layers – cut up carrots, 2 squashes, 1 or 2 sweet potatoes and any other vegetables available such as string beans, peas, corn or cabbage. Wash 1 cup of rice and put on top of all vegetables and then put more vegetables on top to cover. Use enough water to cover mixture, add ˝ cup oil, salt, pepper, tomato sauce and fresh ripe tomatoes cut up. Place in 350 degree oven for 1 hour or until done.

VARIATION:
To above mixture add either fish or ground meat in between layers.
