3 – 4 lbs. beef blade
3 tablespoons lard or drippings
2 teaspoons Salt
Small amount of pepper
1 medium onion quartered
½ cup brown sugar
1 teaspoon Dry mustard
1 tablespoon flour
2 tablespoons vinegar
2 tablespoons lemon juice
½ teaspoon grated lemon rind
1 bay leaf
1 ½ cups water
½ cup raisins

Directions:
Directions:
Brown pot roast in dripping and pour off excess grease. Season with salt and pepper. Add onion. Combine in a sauce pan the brown sugar, dry mustard and flour. Mix well and add vinegar, lemon juice, lemon rind, bay leaf water and raisins. Cook until thickened. Pour over pot roast. Cover tightly and cook 3 to 3 ½ hours or until meat is tender. Discard bay leaf. Thicken cooking liquid with flour for gravy if desired.
